Power bars

Chewy, fudgy, indulgent, gooey and super healthy, great for a pre-workout or a 3pm mood-lift/energy-boost

Ingredients

  • 2 blocks of dates (2 x 250g), or 500g pitted dates
  • 2 Tbsp coconut oil
  • 2 Tbsp water
  • 1/4 cup cup cocoa powder
  • 1 cup roasted macadamia or almond meal
  • 1 cup coconut flakes
  • 1/4 tsp vanilla essence
  • any other delicious things, like buckwheat kernels, choc chips, other chopped nuts or seeds
  • 1 Tbsp hemp seed powder
  • 2 tsp pea protein
  • 1 tsp maca/ashwaganda/baobab powder etc (optional)

How to make them

  1. Chop date blocks into 1cm x 1cm blocks. If using pitted dates, roughly chop them.          dfgh  lk.jpg
  2. Add the chopped dates, coconut oil and water to a medium pot
  3. Mix the dates until coated with oil, then keep mixing and shmoosing the dates down to break them down until you have a paste formed (about 5-10 min)kj
  4. Then add the cocoa powder and vanilla essence and mix well
  5. Add the coconut flakes, ground nuts or other fillings, and mix welllklkjuyh
  6. Press the date mixture into a lined baking tin and place in the fridge for 1-2 hours (or even the freezer)
  7. Then slice and serve.
  8. Store in fridge
